Carrots are amazing because they are:

  • Packed full of powerful nutrients.
  • Can be prepared and cooked in many different ways.
  • ...and they're really cheap!

WHERE DO THEY COME FROM?

Carrots are a root vegetable, which means they grow underground.

Different farming techniques mean they are grown nearly ALL year round in the UK, though they’re at their best from May to September.

WHAT POWERS DO CARROTS GIVE YOU?

Carrots give you soft skin, shiny hair and help you see in the dark!

If you can get them with the leafy green tops, you’re in luck, as they’re super powered and can be eaten too.

Freshly harvested vegetables, and those that are frozen soon after harvesting, have the most nutrients, such as vitamins and minerals. Make sure you remember, carrot skin is full of nutrients, so no need to peel them.

How to get the best carrots

Choose carrots that are firm and bright orange. You can get carrots tinned or frozen, too.

Store carrots in a sealed bag in the fridge so they don’t dry out. Keep them whole, as chopped vegetables don’t last as long.

You can even store them in water in the fridge to make them last longer - just remember to change the water every few days to keep it fresh.

HOW TO PREPARE CARROTS

What you can do with them

When you want to eat them, give them a wash in water and remove any soil, then eat them raw, or cooked!

You can eat them whole, grated, sliced, diced, in ribbons, spirals or chopped into sticks.

When cooking carrots, try to chop them into equal sized pieces as this will make sure they cook evenly. The bigger the pieces, the longer they will take to cook.

WHAT YOU CAN DO WITH CARROTS

How to cook them

You can cook carrots in many different ways. Steam them in a pan or microwave, or you can boil, mash, stir-fry or roast them, and add them to salads, cakes, fritters, or sauces, or dip them into hummus.

Slice carrots, add a splash of water, cover, and put in the microwave for around 5-6 minutes, until they are just tender. Save the water, which will have nutrients from the carrots, and add it to gravy or sauces to keep all those powers.
